Rock buns
Ingredients
250g self raising flour
125 margarine
125 caster sugar
125g mixed fruit
1⁄2 mixed spice
1⁄2 teaspoon nutmeg
1 egg
1 tablespoon milk
1 tablespoon demerara sugar (for decoration)
1⁄2 teaspoon salt
Method
Grease 12 hole bun tin
Preheat oven gas 5, 375 /190c
Mix flour salt and spice
Rub in margarine
Add sugar and fruit
Beat in egg and milk
Mix well
Place spoonfuls of mixture into greased tins
Sprinkle with demerara sugar
Cook for approximately 20 minutes
